Sweet Potato Toast
A fun, nutrient-packed swap for bread — gluten-free, fiber-rich, and full of flavor.
Ingredients (makes 4 slices):
- 1 large sweet potato
(washed, skin on or off)
- Your choice of toppings (ideas below!)
Instructions:
- Slice the sweet potato lengthwise into ¼-inch thick slices.
- Place slices in the toaster (high setting) or on a baking sheet at 400°F (200°C) for 15–20 minutes, until tender but still sturdy.
- Top with your favorite healthy add-ons:
🥑 Avocado + sprinkle of salt & pepper
🍳 Fried or poached egg
🥜 Almond or peanut butter + banana slices
🍅 Hummus + cherry tomatoes
