Here’s a refreshing, healthy summer recipe that’s simple, hydrating, and packed with nutrients — perfect for a light lunch or side dish on a hot
day:
Ingredients:
2 cups watermelon, cubed
1 large cucumber, thinly sliced or spiralized
¼ red onion, very thinly sliced
¼ cup fresh mint leaves, chopped or torn
2 tablespoons feta cheese (optional, or use a dairy-free alternative)
1 tablespoon pumpkin seeds
or chopped pistachios (for crunch)
Lime Dressing:
Juice of 1 fresh lime
1 tablespoon extra virgin olive oil
Pinch of sea salt
Crack of black pepper
Whisk together or shake in a small jar.
Instructions:
In a large bowl, combine watermelon, cucumber, red onion, and mint.
